Internet Connection Drops Exactly Every 4 Hours
For quite some time now, I've been experiencing a strange issue where my internet drops out for 3 seconds, every 4 hours. I realize this would sound like it's not a big deal, but every time it happens, my Zoom, Teams, etc. meeting will stall, and take 60-90 seconds to reconnect. The way I've been tracking this is with the "Internet Connection Monitor" extension in Google Chrome.
In this case, the machine that is detecting these outages is a desktop machine connected via Ethernet to switch that is connected to the gateway Eero. Also, the WiFi is disabled on the desktop, so there's only the ethernet connection. Given that, there isn't a reason why it should be losing connectivity.

If you haven’t already, you should really try to get AT&T to investigate (as painful as that process will be). My money is on it being an issue with your modem, whether it be actually hardware related or buggy firmware.

Since it occurs with such precise regularity, does your ISP's box have a built-in PING capability? If you log in to it and have a continuous PING running from X:25 until X:30 and it shows drops, then that rules out everything downstream of the box -- the Eero, your PC, etc.
