Recent hairpin NAT intermittent issues

I've been using a couple of Eeros provided by my ISP for just over a year. Aside from having to thumb everything into an app (where's the desktop interface?) everything has been working perfectly.

Until a couple of weeks ago. Now it seems my hairpin NAT has become intermittent; sometimes I can access my local websites through a domain name, sometimes I can't. Weirdly this only seems to be affecting webpages as services I have on other ports (such as SFTP, a Minecraft server, etc) all still function as expected.

I'm at a bit of a loss as to how I can fix it, or why it's gone wrong in the first place. Also - this issue only seems to affect Ethernet connections. If I connect to the Eero over WiFi then even when it's exhibiting issues I can access those domains on web perfectly fine. What makes this even more strange is that the server itself is only connected via Ethernet, so it seems likely that only the final Ethernet hop fails.

This intermittent issue is sporadic; it can work for days, it can fail for hours, and everything in between.

I haven't yet found a pattern of how to bring it back to life; restarting the server / my PC don't seem to have an effect. Restarting the router will occasionally fix it, restarting my other switches will occasionally fix it.

The only piece of networking gear in my network that updates itself is the Eero. Has there been any reported issues with some recent firmware updates?
