Eero drops the internet

I've logged a ticket, but any advise is welcome.

I have had a perfect Eero setup for the last 6 months or so, but in the last few weeks the network has developed an issue.  It occurs on all devices, wireless and wired and the network temporarily loses the internet for 2-5 seconds every 5-10 minutes.

On phones when streaming videos it stutters.
Zoom calls cut out.
Online gaming stutters and pauses

The issue is not my ISP as I have tested the router and that is working seamlessly.  I have also swapped around the gateway box, deleted the old network and created a new and I have the same issue.

Is it possibly related to the latest firmware update?
