Latency spikes over WIFI

I noticed latency spikes on my network first when I started hearing music on my HomePod skipping at random times. To confirm this is actually happening, I have a M1 Macbook Pro connected to the my Eero Pro 6 via WIFI and ran a ping test against google.com for 50 sequences.
As you can see from the screenshots, while latency is relatively low, well below 100ms threshold, you will see the occasional 100ms+ spikes.
To troubleshoot this issue, I did the usual 1) Restart the network 2) Restart my devices (Macbook Pro and HomePod. However the issue remained.
To confirm if this issue is related to WIFI connectivity, I plugged my dongle into M1 Macbook Pro that provides an Ethernet port and connected it to the router. Once I re-ran the ping against google, the spikes were gone, all latencies are well below 100ms with most between 10 - 30ms.
I then thought this could be an interference issue so I moved the Eero Pro 6 right next to my laptop and turned off my monitor near by to re-run the ping test against google.com back over wifi with the Ethernet cord unplugged. Unfortunately, I was able to reproduce the issue again. In fact, the results were worse than the initial run when my Macbook Pro was further away, reaching as high as 200ms.
Does anyone have any ideas how I can resolve this issue?

Unfortunately no. I was first on a call with Eero support which got transferred to an email correspondence. The exchange went on for over a month. Everything seems to check out. I tried reaching out to my Internet service provider multiple times. They claim they have addressed the issue, but the issue remains. It's still a mystery.
