I currently am using Linksys Velop as my mesh system. All secondary nodes are wireless and their ethernet ports being used (Philips Hue Hub, etc.). I'm considering switching to Eero, but wanted to verify I can use a second Eero 6 Router as an extender since the actual extenders don't have an ethernet port.

klbass68 yea all the eero units work together whether they are wired or wirelessly connected (in the case of the Beacon, only wirelessly). I do the same thing as you where my Hue hub and a couple other things are wired directly to an eero that is wirelessly connected to the rest of my eeros.
It is important to note that in every network, you must use an eero with an Ethernet port on the back so you can connect it to your modem. Once your gateway eero is installed you may use any combination of eeros to setup your network.
