I would suggest giving support a call to check into this.

On the surface I don't see how what they are saying could be right.

That iPad Air 2 doesn't have a radio capable of connecting to 6E networks, so I don't see how a 6E network could be interfering with it.

But to answer your question, no, there is no way to disable the wifi 6E from broadcasting short of unplugging the eero.
